Harvesting is done exclusively by hand during the first weeks of September when the grapes are the ripest. After a soft pressing of the grapes, vinification, and fermentation occurs at a controlled temperature. In the first stage of vinification, the wine is decanted in stainless steel for 48-hours at a controlled temperature. Afterward, alcoholic fermentation and subsequent wood refining take place for 4-months. A short wood aging provides delicate tertiary aromas, leaving room for the freshness and vivacity typical of the Vernaccia di San Gimignano varietal. Bottle aging takes at least 2- months.
