TODAY’S RECIPE
FRESH CHICKPEAS SALAD
Cook with Vittoria and Giulia a fresh and healthy chickpeas salad. We chose to add inside just vegetables but you can also have it as a complete meal adding some feta cheese or mozzarella.
We already cooked the chickpeas, they were dry, so they had to stay overnight in cold water and after had to boil for 1 hour. If you are in hurry you can buy the one in cans.
The Ingredients for 4 people are:
- 300 gr or 11 oz of chickpeas
- 100 gr or 4 oz of zucchini
- 80 gr or 3 oz of red onion
- 1 lemon juice
- 100 gr or 4 oz of yellow pepper
- 100 gr or 4 oz of cherry tomatoes
- 50 gr or 2 oz of cucumber
- 12 gr or ½ oz of mint
- E.V.O. Olive Oil
- Salt & Pepper
