SPELT SALAD
Cook with Vittoria and Giulia a fresh and simple Spelt salad. This easy-to-make dish it’s perfect for a light and tasty hot summer day meal. We decided to season the Spelt with one of the most famous and most delicious Italian sauce the Basil Pesto ( we decided not to add garlic, but in the original recipe you will find also it ). The Pesto is a Ligurian sauce that was born around 1850. Poor people of the region could not use spices to season and flavor their fish ( one of the main products and food, Liguria is near the seaside ), so they start to use a lot of aromatic herbs, especially basil. The region, thanks to the particular and favorable climatic conditions, was full of spontaneous herbs. It’s like that that the Pesto was born.

The Ingredients 4 people are:
- 300 gr or 10 oz of Spelt
- 200 gr or 7 oz of cherry tomatoes
- 25 gr or 1 oz of basil leaves
- 35 gr or 1½ oz of Parmesan Cheese
- 8 gr or ½ oz of pinenuts
- Extra Virgin Olive Oil
- Salt & Pepper
