The period of harvest is at the end of August. Harvesting is done by hand and the grapes are given in the cellar, with a soft pressing of the grapes. Vinification takes place in stainless steel tanks at a controlled temperature not exceeding 17 °.
In the first days of March, sparkling wine is made according to the Charmat method, the aging happen in steel tanks until the wine becomes sparkling.
Piuma della Marronaia is the result of a project begun a few years ago with the aim of combining tradition and innovation and at the same time it is one of the last born of the company. It is the expression of the philosophy adopted by Pietro and Corrado in continuing the family business.
