Piuma della Marronaia is the result of a project begun a few years ago with the aim of combining tradition and innovation and at the same it is the last born of the company. It is the expression of the philosophy adopted by Pietro and Corrado in continuing the family business.
The period of harvest is just after harvesting the grapes to become Vernaccia di San Gimignano docg. Harvesting is done by hand and the grapes are given in the cellar, with a soft pressing of the grapes. Vinification takes place in stainless steel tanks at a controlled temperature not exceeding 17 °.
In the first days of March, sparkling wine is made according to the classic method with bottle fermentation, after which the bottles remain laden for at least 24 months in order to enhance the complexity of the wine.
Piuma della Marronaia is dedicated to youth, that time of sparkling and light life that accompanies everyone with experiences and memories.
