The Vernaccia di San Gimignano is to be considered an autochthonous white grape of our region, decanted and appreciated since antique times. The modern technique of wine production of which soft pressing and fermentation at controlled temperature, using selected yeasts and careful agronomical and oenological practice permits the production of a wine strongly linked to the territory but with modern interpretation capable of enhancing the aromatic profile of this noble vine. Grapes produced by biological farming.

Production area: Tuscany Composition of land: medium mixture of Pliocene origin with some sandy and clay particles. Average height of vineyard: 300 metres above sea level Density of plants per hectare: 4000 Type of growth: Guyot Grape: 90% Vernaccia di San Gimignano (selecting the better grapes); 10% Chardonnay Wine production: hand picked and separation of two different types of grapes into crates. Annual harvesting into crates. Light soaking of grapes, pressing. Cold still decantation. Alcoholic fermentation in stainless steel tanks at a temperature of 18°c. No further fermentation is followed Refined in stainless steel: for 6 months Refined in bottles: minimum 2 months

Sensory analysis
Visual exam: bright straw-yellow colour Olfactory exam: very intense and persistent. Characteristic variegated smell, floral hints of wisteria and hawthorn. Taste exam: to the palate seems soft and fresh, good balance and excellent structure. Finally very persistent.
